Crispy Air Fryer Zucchini with Parmesan (TNT)
Air Fryer Zucchini with Parmesan is a quick, crispy, and cheesy veggie side that turns simple zucchini into golden, savory perfection. Just a handful of ingredients and 10 minutes in the air fryer make this a go-to favorite for snacking, sharing, or serving alongside any main dish!
INGREDIENTS:
• 3 medium zucchini, sliced into ½-inch rounds
• Spray olive oil (or 1–2 tablespoons if brushing)
• 1 teaspoon Italian seasoning
• Salt and pepper, to taste
• ½ cup grated Parmesan cheese
• 2–3 tablespoons panko breadcrumbs (for extra crunch)
• Garlic powder, onion powder, or smoked paprika (for extra flavor)
• Red pepper flacks (for heat)
• Yellow squash (as a swap or mix-in)
DIRECTIONS:
Wash and slice zucchini into even ½-inch rounds.
In a large bowl, toss zucchini with olive oil, Italian seasoning, salt, and pepper.
Add the grated Parmesan and gently toss again to coat.
Arrange zucchini in a single layer in the air fryer basket, working in batches if needed.
Air fry for 8–10 minutes, shaking halfway through, until golden brown and crispy on the edges.
Serve immediately while warm and cheesy, with your favorite dip if desired.
For best crispiness, don’t overcrowd the air fryer basket—air circulation is key.
Freshly grated Parmesan gives the best melt and savor; avoid pre-shredded if you can.
Add panko for crunchier bites, or swap in yellow squash for color and variety.
Reheat leftovers in the air fryer at 375°F for 3–4 minutes—good as new!
Great served with ranch, marinara, or garlic aioli on the side.
