Gail's Favorite Zucchini Oven Chips (TNT) Breaded, oven-fried zucchini chips taste like they’re fried, yet they are baked and amazingly crispy. These chips make a healthy substitute for French fries or potato chips. Yield: 4 servings (serving size: about 3/4 cup)   Ingredients 1/4 cup dry breadcrumbs 1/4 cup (1 ounce) grated fresh Parmesan cheese 1/4 teaspoon seasoned salt 1/4 teaspoon garlic powder 1/8 teaspoon freshly ground black pepper 2 tablespoons heavy cream (or milk) 2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small) Cooking spray Preparation Preheat oven to 425°. Combine first 5 ingredients in a medium bowl, stirring with a whisk. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture. Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet. Bake at 425° for 30 minutes or until browned and crisp. Serve immediately. Gail's Notes

Salisbury Steaks Recipe for Two (TNT) From Taste of Home TOTAL TIME: Prep: 15 min. Cook: 20 min. YIELD: 2 servings Ingredients 1/3 cup finely chopped onion 2 tablespoons uncooked instant rice 1/8 teaspoon salt 1/8 teaspoon pepper 1 egg white 1/2 pound lean ground beef (90% lean) 3 teaspoons olive oil, divided 3/4 cup sliced fresh mushrooms 1 cup beef broth 2 teaspoons Worcestershire sauce 1 tablespoon cornstarch 1 tablespoon cold water Directions In a small bowl, combine the onion, rice, salt, pepper and egg white. Crumble beef over mixture and mix gently. Shape into two 4-1/2-in. x 2-in. oval patties.   In a large skillet, brown patties in 1-1/2 teaspoons oil for 3-4 minutes on each side. Remove and set aside; drain drippings.   In the same skillet, cook mushrooms in remaining oil until tender. Stir in broth and Worcestershire sauce. Return patties to the pan. Br

Parmesan Roasted Cauliflower Recipe (TNT) Serves 2 | Prep Time: 10 Minutes | Cook Time: 45 Minutes Adapted from: Bon Appetit 8 oz cauliflower florets, sliced horizontally 2 tablespoons melted butter 1 tablespoon olive oil Pinch of garlic salt (or regular salt, if that's your preference) 3 light dashes of ground black pepper 1/2 cup Parmesan-Romano cheese mix 1 teaspoon chopped parsley leaves (optional) Preheat oven to 400°. Toss the sliced cauliflower with the butter and olive oil. Season with garlic salt and black pepper. Transfer the cauliflower to a baking sheet, in single layer, roast until almost tender about 20-30 minutes. Remove from the oven and sprinkle the grated Parmesan and chopped parsley leaves on top of the cauliflower, roast again until the cheese melts and slightly crusty, about 5 minutes.
