Gail's Favorite Chinese Fried Noodles (TNT)   Prep Time: 15 Minutes Cook Time: 25 Minutes       Ready In: 40 Minutes Servings: 6 "A quick and easy stir-fry using ramen noodles and any variety of your favorite vegetables and meat, with a little hint of sesame and soy." INGREDIENTS: 2 (3 ounce) packages Oriental flavored ramen noodles 3 eggs, beaten vegetable oil 4 green onions, thinly sliced         1 small carrot, peeled and grated 1/2 cup green peas 1/4 cup red bell pepper, minced 2 tablespoons sesame oil soy sauce DIRECTIONS: Boil ramen noodles for 3 minutes, or until softened, without flavor packets. Reserve flavor packets. Drain noodles, and set aside. Heat 1 tablespoon oil in a small skillet. Scramble eggs in a bowl. Cook and stir in hot oil until firm. Set aside. In a separate skillet, heat 1 teaspoon of oil over medium heat. Cook and stir green onions in oil for 2 to 3 minutes, or until softened. Transfer

Gail's Favorite Sun-Dried Tomato Bruschetta (TNT) Based on original recipe by Paul Buzzetta (Sapore Restaurant in St. Louis) 1 cup loosely-packed sun-dried tomatoes (~ 5 ounces) 1/4 cup chopped fresh basil (or 2 tablespoons dried basil) 1 tablespoon chopped garlic 1/4 cup balsamic vinegar 1/2 cup extra virgin olive oil Place tomatoes in a small bowl; add hot water to cover. Let stand until softened, about 5 minutes drain well. In work bowl of food processor fitted with steel knife blade, process softened sun-dried tomatoes, basil, and garlic until well combined. Add balsamic vinegar, pulse until combined. With machine running, slowly pour the 1/2 cup olive oil through feed tube in a slow, steady stream; process until smooth. Place in serving bowl and set aside.  Gail's Notes:  This is simply amazing!  Serve with a warm baguette and some freshly grated parmigiano-reggiano cheese. Vegetable MeatLoaf Recipe for Two (TNT) TOTAL TIME: Prep: 10 min. Bake: 45 min. YIELD:2 servings Ingredients     1/2 pound ground beef     1 slice bread, torn into small pieces     1 egg, beaten      1/4 cup shredded carrot     1/4 cup chopped, cooked mushrooms     2 tablespoons finely chopped onion     2 tablespoons finely chopped green pepper     2 tablespoons finely chopped celery     1/2 teaspoon salt     Dash each pepper and garlic powder     5 tablespoons chili sauce or ketchup, divided     2 baked potatoes, optional     Shredded cheddar cheese, optional Directions In a bowl, combine ground beef, bread, egg, carrot, mushrooms, onion, green pepper, celery, seasonings and 2 tablespoons chili sauce or ketchup. Form into a loaf in an ungreased 5-3/4-in. x 3-in. x 2-in. loaf pan. Spoon remaining chili sauce or ketchup over loaf. Bake, uncovered, at 350° for 45-50
