Cranberry Pecan Chicken Salad Party Sandwich (TNT/Gail's Favorite!)

Ingredients  

  • 1 large rotisserie chicken breast, cut into small cubes or shredded
  • 1 stalk of celery diced
  • 1/4 cup sliced green onions
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/4 cup chopped fresh spinach
  • 6 tbs mayonnaise 
  • teaspoon salt to taste
  • teaspoon Penzeys Fox Point seasoning
    1 tablespoon Bayou Bourbon Glaze (optional, see note below)
  • teaspoon pepper to taste

Instructions

  • In a large bowl combine chicken, celery, onion, cranberries, and pecans.
  • Stir to combine.
  • Add into chicken salad mayonnaise, salt, Fox Point seasoning, and pepper.
  • Mix well (and store in fridge for about 30 minutes, as that helps blend the flavor better).
  • Serve on a bed of lettuce or toasted bread slices (or simply eat the salad in a bowl).

Gail's Notes: This is one of my favorite chicken salad party sandwiches EVER! Very tasty! And I just added 1 TB of  Bayou Bourbon Glaze and that really added a nice flavor as well (9/10/2025).
