Mediterranean Pasta Salad (TNT)

Cook time: 15 minutes
6 - 8 servings
Ingredients:
1 package Bob Evans pre-cooked Bacon (2.1 oz)
8 ounces bow tie pasta
1/2 cup sun-dried tomato salad dressing (You can also use Italian or
Greek-style dressing)
8 ounces fresh mozzarella, cut into small cubes
1 cup cherry tomatoes, cut in half
1/3 cup kalamata olives, chopped
4 sun-dried tomatoes in oil, drained and chopped
Directions:
Microwave bacon according to package directions. Cool slightly and then
chop. Meanwhile cook pasta according to package directions and drain. In a large
serving bowl, combine all ingredients and stir well. Serve warm. * Can also use
1 package of Bob Evans uncooked bacon. Prepare according to packaging.
Gail’s Notes: This is really
good--great flavor with a sweet-tartness to it. I forgot to get cherry tomatoes, so I ended
up sprinkling some dried cranberries into it. Turned out a nice added plus to the salad. I think next time I’ll try feta cheese in
place of the mozzarella, just for the heck of it. Oh, and I used Kraft Sun Dried Tomato Vinaigrette as it is really good (for a bottled salad dressing).
