Chicken, Spinach, and Mushroom Bake
Creamy baked chicken loaded with spinach, mushrooms, and melted cheese

Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups chopped fresh spinach
- 1 cup sliced mushrooms
- 1 cup cream of mushroom soup
- 1/2 cup sour cream
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F (190°C).
2. Season chicken with salt, pepper, and Italian seasoning.
3. Heat olive oil in a skillet, sauté garlic and mushrooms until soft.
4. Add spinach and cook until wilted, then remove from heat.
5. In a bowl, mix cream of mushroom soup and sour cream.
6. Place chicken in a baking dish and top with spinach-mushroom mixture.
7. Spread creamy mixture over chicken and sprinkle mozzarella on top.
8. Bake 25–30 minutes until chicken is cooked through and cheese is bubbly.
9. Let rest a few minutes before serving.
Pro Tip: Drain excess liquid from spinach to keep the sauce thick and creamy.
