Here's a simple recipe for Jiffy Corn Casserole, a delicious and easy-to-make side dish.

Ingredients:
  • 1/2 cup melted butter
  • 1 box Jiffy Corn Muffin Mix
  • 1 can corn (not drained)
  • 1 can creamed corn
  • 1 egg
  • 8 oz cheddar cheese, shredded
  • 1/2 cup sour cream
  • Optional: sugar (1-2 tsp for savory, 1/4 cup for sweet)
Instructions:
  1. Preheat oven to 350°F.
  2. Mix melted butter, Jiffy mix, corn, creamed corn, egg, and half of the cheddar cheese.
  3. Dollop sour cream over the top and gently swirl it in. Sprinkle remaining cheese.
  4. Bake for 40-45 minutes or until the center is set.
Tips:
  • Use a 9x13 inch pan or a 2-quart lidded casserole dish.
  • Keep the lid on for the first 20 minutes, then remove to prevent over-browning.
  • The casserole should be tender, crumbed, and moist in the center with crispy edges.
  • You can customize the recipe to be sweet or savory depending on your taste.
Variations:
  • Add crispy bacon, green chiles, diced onion, or jalapenos to the batter for extra flavor.
  • Use different types of cheese, such as pepper jack or parmesan.
  • Make ahead and refrigerate or freeze for later use ¹ ².
