Introduction: These crispy baked zucchini fries are a perfect healthier alternative to traditional fries. Coated in breadcrumbs, Parmesan, and seasoning, they offer a crunchy, golden exterior and a tender zucchini inside. Ideal for a snack, side dish, or appetizer, these fries are both delicious and easy to make!

Ingredients:

  • 2 medium zucchinis
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano (optional)
  • 1 egg
  • Salt and pepper to taste
  • Olive oil spray (for baking)

Instructions:

  1. Prepare the zucchini: Slice the zucchinis into thin fries (about ¼ inch thick).
  2. Preheat the oven: Set the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Prepare the coating: In a shallow bowl, mix together the panko breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
  4. Dunk the zucchini: In a separate bowl, beat the egg. Dip each zucchini slice into the egg, then coat it with the breadcrumb mixture.
  5. Arrange on the baking sheet: Place the coated zucchini fries on the prepared baking sheet in a single layer. Lightly spray them with olive oil.
  6. Bake: Bake for 20-25 minutes, flipping halfway through, until the zucchini fries are golden and crispy.
