Cheesy Garlic Butter Mushroom

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 cup mushrooms, finely chopped

  • 3 cloves garlic, minced

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 1 cup shredded mozzarella cheese

  • ½ cup cream cheese, softened

  • ¼ cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • ½ teaspoon paprika

  • Salt and black pepper, to taste

  • 1 tablespoon fresh parsley, chopped (for garnish)

 Prepare the Filling

  • Heat butter and olive oil in a skillet over medium heat.

  • Add chopped mushrooms and sauté for 4–5 minutes until soft.

  • Stir in minced garlic and cook for 1 minute until fragrant.

  • Remove from heat and let cool slightly.

  • Mix in cream cheese, mozzarella, Parmesan, Italian seasoning, salt, and pepper.

 Prepare the Chicken

  • Using a sharp knife, carefully cut a pocket into the side of each chicken breast.

  • Season both sides with salt, pepper, and paprika.

  • Spoon the mushroom-cheese mixture evenly into each pocket.

  • Secure with toothpicks if needed.

 Sear and Bake

  • Preheat oven to 375°F (190°C).

  • In an oven-safe skillet, sear stuffed chicken in a little butter or oil for 3–4 minutes per side until golden brown.

  • Transfer skillet to the oven and bake for 18–22 minutes, or until internal temperature reaches 165°F (75°C).

 Serve

  • Garnish with fresh parsley.

  • Serve hot with roasted vegetables, mashed potatoes, or a fresh green salad.
