Hearty French Onion Soup with Tender Beef and Crispy Baguette

Ingredients:
2 large onions, thinly sliced
1 lb beef stew meat
4 cups beef broth
2 tablespoons olive oil
2 teaspoons thyme
2 bay leaves
2 cloves garlic, minced
Salt and pepper to taste
2 tablespoons flour (optional, for thickening)
4 slices baguette
1 cup shredded Gruyère cheese
1 cup shredded Parmesan cheese
Directions:
Cook
the beef: Heat olive oil in a large pot over medium heat. Add the beef
stew meat and cook until browned on all sides. Remove from the pot and
set aside.
Sauté
the onions: In the same pot, add the sliced onions and cook over low
heat for about 20-30 minutes, stirring occasionally, until the onions
are caramelized and golden brown.
Add
garlic and seasonings: Add the minced garlic to the onions and cook for
an additional minute. Add the thyme, bay leaves, salt, and pepper.
Add
broth and beef: Return the browned beef to the pot and pour in the beef
broth. Bring the mixture to a simmer and cook for 45 minutes to an
hour, allowing the flavors to meld together. (If you want a thicker
soup, stir in the flour and cook for a few more minutes.)
Prepare
the baguette: While the soup is simmering, toast the baguette slices in
a broiler or on a pan until crispy and golden brown.
Serve:
Ladle the soup into bowls, place a slice of toasted baguette on top of each bowl, and sprinkle with Gruyère and Parmesan cheese. Place the bowls under the broiler for 2-3 minutes, or until the cheese melts and bubbles.
