BLT Macaroni Salad Bowl
Crisp bacon, cherry tomatoes, and elbow macaroni mixed with a creamy dressing in a summer-perfect bowl.
Ingredients:
8 oz elbow macaroni
1 cup cherry tomatoes, halved
1/2 cup green onions, sliced
6 slices cooked bacon, crumbled
6 slices cooked bacon, crumbled
Dressing
1 cup mayonnaise
Salt and pepper, to taste
Steps:
Bring a large pot of salted water to a boil. Add
macaroni and cook until al dente according to package instructions.
Drain and rinse under cold water to halt cooking.
While pasta cooks, fry bacon in a skillet over
medium heat until crisp. Transfer to paper towels to drain, then crumble
into pieces.
In a large bowl, mix cooled macaroni, crumbled bacon, halved cherry tomatoes, and sliced green onions.
Stir in mayonnaise and season with salt and pepper to taste. Toss until ingredients are evenly coated.
Tips:
Rinsing the macaroni under cold water stops cooking and prevents the salad from becoming mushy. Adding shredded cheddar cheese would kick this up a notch for sure!
