Savory Garlic Mushroom Chicken with Spinach

Ingredients:
2 boneless, skinless chicken breasts
Salt and black pepper, to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
2 cups mushrooms (button, cremini, or shiitake), sliced
4 garlic cloves, minced
1 cup chicken broth
1/4 cup light cream (or half 'n' half)
1 cup fresh spinach leaves
1 teaspoon dried thyme
Grated Parmesan cheese (optional)

Instructions:

Season the Chicken:* Season the chicken breasts with salt and black pepper.

Sear the Chicken:* Heat the olive oil in a large skillet over medium-high heat. Sear the chicken breasts until browned on both sides, about 5-6 minutes per side. Transfer the chicken to a plate and set aside.

Sauté the Mushrooms:* In the same skillet, add the unsalted butter. Once melted, add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.

Add Garlic and Chicken Broth:* Add the minced garlic to the skillet and cook for 1 minute, until fragrant. Pour in the chicken broth and bring the mixture to a simmer. Scrape up any browned bits from the bottom of the skillet.

Return the Chicken:* Return the chicken breasts to the skillet and spoon some of the mushroom and garlic sauce over the top of each breast.

Add Cream and Spinach:* Reduce the heat to medium-low and pour in the light cream. Stir to combine, then add the fresh spinach leaves to the skillet. Cook until the spinach has wilted, about 2-3 minutes.

Serve:* Serve the chicken breasts topped with the savory mushroom and spinach sauce. Sprinkle with grated Parmesan cheese and dried thyme, if desired.
