Savory Chicken Stuffed with Cheese and Mushrooms, Drizzled in Garlic Butter

Ingredients:
2 chicken breasts (boneless, skinless)
1/2 cup cream cheese (softened)
1/2 cup grated mozzarella cheese
1 cup mushrooms (sliced)
2 cloves garlic (minced)
2 tablespoons butter
1 tablespoon olive oil
1/2 teaspoon thyme
Salt and pepper to taste

Directions:
Preheat oven to 375°F (190°C). Slice a pocket into each chicken breast.
In a skillet, sauté mushrooms with olive oil and garlic for 5 minutes until softened. Season with salt, pepper, and thyme. Let cool slightly.
Mix cream cheese and mozzarella cheese, then fold in the mushroom mixture.
Stuff each chicken breast with the cheese and mushroom filling. Secure with toothpicks.
Heat butter in a skillet over medium heat. Sear chicken for 4-5 minutes per side until golden brown.
Transfer chicken to the oven and bake for 20-25 minutes or until fully cooked.
Serve hot, drizzled with the garlic butter sauce from the pan.
