Creamy Lazy Day Chicken Carbonara in One Skillet

Ingredients
:

2 chicken breasts, boneless and skinless
8 oz pasta (spaghetti or fettuccine work best)
1 tablespoon olive oil
4 slices bacon, chopped
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
2 eggs
Salt and pepper to taste
Fresh parsley for garnish (optional)

Directions:

Cook the pasta according to the package instructions. Drain and set aside.

While the pasta cooks, heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook in the skillet for about 5-7 minutes per side until fully cooked. Remove from the skillet and set aside to rest before slicing into strips.

In the same skillet, add chopped bacon and cook until crispy, about 4-5 minutes. Remove and set aside, leaving a little bit of bacon grease in the skillet.

Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.

Lower the heat and pour in the heavy cream, stirring to combine. Add Parmesan and mozzarella cheeses, and stir until melted and creamy.

In a small bowl, whisk together the eggs. Gradually add a small amount of the hot cream mixture to the eggs while whisking to temper them. Then, slowly pour the egg mixture back into the skillet, stirring constantly to create a creamy sauce.

Add the cooked pasta, chicken slices, and crispy bacon to the skillet. Toss to combine everything evenly in the sauce. 
Garnish with fresh parsley, and serve immediately.
