Cheesy Egg and Spinach Muffin


Cheesy Egg and Spinach Muffins 
Yields 6 Servings

Ingredients 

 4 large eggs
 50 g baby spinach, chopped
 50 g shredded cheddar cheese
 Salt and pepper to taste
 0.25 tsp tsp garlic powder for extra flavor (optional)

Directions

Preheat the oven to 350°F (175°C) and grease a muffin tin with nonstick spray.

In a bowl, whisk the eggs, then add spinach, cheese, salt, pepper, and garlic powder.

Pour the mixture evenly into 6 muffin tin cups.

Bake for 18-20 minutes or until set and lightly golden on top.

Let them cool slightly, then remove from the muffin tin and enjoy warm or cold.
