🧁 Cheddar Crab and Shrimp Mini Quiches

Ingredients (Makes ~24 mini quiches)

Seafood filling:

  • ½ cup cooked shrimp, chopped

  • ½ cup lump crab meat (fresh, canned, or imitation, drained)

  • 1 green onion, finely chopped

  • ½ teaspoon Old Bay seasoning (or paprika + pinch of cayenne)

  • Salt & pepper to taste

Egg mixture:

  • 4 large eggs

  • ¾ cup half-and-half (or whole milk)

  • ½ cup shredded sharp cheddar cheese

  • Optional: 2 tablespoons cream cheese, softened (for extra richness)

Crust (optional):

  • 1 sheet refrigerated pie dough or puff pastry, cut into circles
    (or go crustless for a low-carb version)


Instructions:

🔹 1. Preheat oven to 375°F (190°C).

Grease a 24-cup mini muffin tin well or line with pastry circles pressed into the cups.

🔹 2. Prepare the filling:

  • In a small bowl, mix chopped shrimp, crab, green onion, and Old Bay.

  • Season lightly with salt and pepper. Set aside.

  • In a separate bowl, whisk eggs, half-and-half, and (optional) cream cheese until smooth.
