Best Taco Casserole

Ingredients:
1 pound lean ground beef
2 cups salsa
1 (16-ounce) can chili beans, drained
3 cups tortilla chips, crushed
2 cups sour cream
1 (2-ounce) can sliced black olives, drained
1/2 cup chopped green onion
1/2 cup chopped fresh tomato
2 cups shredded Cheddar cheese
Directions:
Preheat the oven to 350°F (175°C). Coat a 9x13-inch baking dish generously with cooking spray.
Heat a large skillet over medium-high heat. Add the 1 pound of lean ground beef and cook and stir until it is browned and crumbly, which takes about 8 to 10 minutes.
Stir in the 2 cups of salsa, then reduce the heat to low and let it simmer until most of the liquid is absorbed, about 20 minutes. Add the 16-ounce can of drained chili beans and cook until they are heated through.
Spread the 3 cups of crushed tortilla chips evenly across the bottom of the prepared baking dish. Spoon the hot beef and bean mixture on top of the chip layer.
Spread the 2 cups of sour cream evenly over the beef layer. Then, sprinkle the drained 2-ounce can of sliced black olives, ½ cup chopped green onion, and ½ cup chopped fresh tomato over the sour cream. Top the entire casserole with the 2 cups of shredded Cheddar cheese.
Bake in the preheated oven for about 30 minutes, or until the casserole is hot and bubbly and the cheese is melted.
Serve warm. Servings: 6-8
