Best Crustless Spinach, Onion & Feta Quiche
Ingredients
1 tbsp olive oil
1 small onion, chopped
1 (10 oz) package frozen spinach, thawed and drained
4 large eggs
1 cup milk
½ cup crumbled feta cheese
½ cup shredded mozzarella (optional)
Salt & pepper to taste
Preparation
Preheat oven to 375°F (190°C).
Sauté onion in olive oil until soft. Add spinach and cook for 1–2 minutes.
Whisk eggs with milk, salt, and pepper. Stir in spinach mixture and cheeses.
Pour into greased 9-inch pie dish and bake for 30–35 minutes, until set and lightly golden
Cool slightly before slicing and serving
