Crispy on the outside, tender and flavorful on the inside—these salmon patties are a quick and delicious way to enjoy canned salmon.

Ingredients:

1 can (415g) salmon, drained and flaked

1/2 cup breadcrumbs

1/4 cup finely chopped onion

1 egg, beaten

1 tablespoon lemon juice

1 tablespoon chopped fresh parsley (optional)

Salt and pepper, to taste

2 tablespoons vegetable oil, for frying

Instructions:

1. Prepare the Mixture:
In a large mixing bowl, combine flaked salmon, breadcrumbs, chopped onion, beaten egg, lemon juice, parsley (if using), salt, and pepper. Mix until everything is well combined.

2. Shape the Patties:
Form the mixture into 6–8 small patties. You can make them thicker for a juicier center or thinner for extra crispiness.

3. Cook:
Heat oil in a large skillet over medium heat. Once hot, gently place the patties in the skillet. Cook for 3–4 minutes on each side until golden brown and heated through.

4. Serve:
Serve hot with a crisp garden salad, tartar sauce, or a squeeze of fresh lemon. You can also enjoy them cold for lunchboxes or quick snacks.
