Ritz Cracker Chicken Casserole

Servings: 6 servings
3 cups cooked chicken, shredded or cubed
2 cups cooked elbow macaroni or small pasta
1 can (10.5 oz) cream of chicken soup
½ cup of sliced green onions
½ cup of sliced green onions
1/2 cup sour cream
1/2 cup milk
1 1/2 cups shredded cheddar cheese
1/2 teaspoon garlic powder
salt and black pepper to taste
1 sleeve ritz crackers (about 30 crackers), crushed
4 tablespoons butter, melted
chopped parsley for garnish (optional)
Instructions:
Preheat oven to 350°f (175°c). lightly grease a 9x13-inch baking dish.
In a large mixing bowl, combine cooked chicken, cooked pasta, cream of chicken soup, sour cream, milk, cheddar cheese, sliced green onions, garlic powder, salt, and pepper. stir until well blended.
Pour the mixture into the prepared baking dish and spread evenly.
In a separate bowl, mix the crushed ritz crackers with melted butter until coated. sprinkle evenly over the top of the casserole.
Bake uncovered for 25–30 minutes, or until the top is golden brown and the casserole is bubbly.
Let rest for 5 minutes before serving. garnish with chopped parsley if desired.
Pro tip: for extra richness, add a handful of mozzarella or swiss cheese to the chicken mixture before baking.
