Southern Style Mayonnaise and Parmesan Chicken

Ingredients
4 boneless, skinless chicken breasts
1 cup mayonnaise
1/2 cup grated parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper to taste
1 cup breadcrumbs
1 tablespoon olive oil

Directions
Preheat your oven to 375°F (190°C).
In
a medium bowl, mix together the mayonnaise, parmesan cheese, garlic
powder, onion powder, paprika, salt, and pepper until well combined.
Place the chicken breasts in a baking dish.
Spread the mayonnaise mixture evenly over each chicken breast, ensuring they are fully coated.
In a separate bowl, combine the breadcrumbs with olive oil and mix until the crumbs are lightly coated.
Sprinkle the breadcrumb mixture over the mayonnaise-coated chicken breasts.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the topping is golden brown.
Allow the chicken to rest for a few minutes before serving.
Variations & Tips
For
a bit of a kick, add a pinch of cayenne pepper to the mayonnaise
mixture. You can also experiment with different cheeses, such as asiago
or romano, for a unique flavor twist. If you're looking for a lower-carb
option, try using crushed pork rinds instead of breadcrumbs for the
topping. This dish can also be adapted for grilling by wrapping the
coated chicken in foil and cooking over medium heat until done.
