Knorr Spinach Dip Smothered Chicken

Juicy, tender chicken breasts filled with a spinach dip filling using a packet of delicious Knorr seasoning.

Ingredients

  • 4 8 oz Chicken Breasts
  • Salt and Pepper
  • 1 tbs Avocado oil
  • 1 Cup Mayonnaise
  • 1 Cup Sour Cream
  • 8 oz Water Chestnuts, finely chopped optional
  • 10 oz Bag of frozen spinach, thawed and drained
  • 1 Packet Knorr Vegetable Recipe Packet
  • 8 oz Freshly Grated Mozzarella

Instructions

  • Preheat oven to 400 degrees
  • Slice each chicken breast lengthwise and season both sides with salt and pepper.
  • In a skillet over medium heat, lightly brown in the avocado oil for about 2-3 minutes per side. remove and set aside
  • Mix the next 5 ingredients together.
  • Lay the chicken in a baking dish. Spoon some of the spinach mixture on each one then top with the cheese.
Bake for about 20 minutes or until cheese is completely melted and chicken is cooked to 165 degrees. 
Gail's Notes: I pretty sure I've made this recipe before (back in the ol' days) and it was really tasty.
