Southern Style Cheesy Herb Mashed Potato Puffs

Ingredients
2 cups mashed potatoes
1 cup shredded sharp cheddar cheese
1/4 cup grated Parmesan cheese
2 large eggs
1/4 cup all-purpose flour
2 tablespoons chopped fresh chives
1 tablespoon chopped fresh parsley
1/2 teaspoon garlic powder
Salt and pepper to taste
Butter or cooking spray for greasing the muffin tin

Directions
Preheat your oven to 400°F (200°C) and lightly grease a mini muffin tin with butter or cooking spray.
In
a large mixing bowl, combine the mashed potatoes, cheddar cheese,
Parmesan cheese, eggs, flour, chives, parsley, garlic powder, salt, and
pepper. Mix until well combined.
Spoon the potato mixture into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the puffs are set.
Allow the puffs to cool in the tin for a few minutes before removing them. Serve warm and enjoy!
Variations & Tips
For
a bit of spice, add a pinch of cayenne pepper or a dash of hot sauce to
the potato mixture. If you have picky eaters, you can omit the herbs or
substitute them with milder ones like dill or basil. For a gluten-free
version, replace the all-purpose flour with almond flour or a
gluten-free flour blend. You can also experiment with different cheeses,
such as Gruyère or mozzarella, for a unique flavor twist.
