Cracker Barrel Meatloaf is a flavor-packed dish that combines ground beef with onions, bell peppers, tomatoes, and a rich, tangy glaze for an unbeatable combination. Ingredients:
2 lbs ground beef
1 onion, finely chopped
1 green bell pepper, finely chopped
14.5 oz can diced tomatoes, drained
2 eggs, lightly beaten
1 cup breadcrumbs
1/2 teaspoon salt
1/2 teaspoon black pepper

For the Glaze:

1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons mustard

Instructions:
Preheat your oven to 350 degrees F (175 degrees C). Grease a loaf pan or line it with parchment paper.
In a large bowl, combine the ground beef, chopped onion, bell pepper, drained diced tomatoes, beaten eggs, breadcrumbs, salt, and pepper. Mix well until all the ingredients are thoroughly
incorporated.
Press the mixture into the prepared loaf pan, making sure it’s evenly spread.
In a small bowl, make the glaze by combining the ketchup, brown sugar, and mustard. Stir until smooth.
Spread half of the glaze evenly over the meatloaf.
Bake in the preheated oven for 45 minutes.
After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze on top.
Return the meatloaf to the oven and continue baking for another 15 minutes, or until the meatloaf is fully cooked through.
Allow the meatloaf to rest for 10 minutes before slicing and serving.
