Black Bean-Chicken-Salsa Burritos (TNT)

Original recipe from Cooking Club Magazine (formerly known as Cooking Pleasures)

Time 5 minutes; Serves 4

Ingredients:

    1 (15oz) can black beans, rinsed, drained
    1/2 c salsa
    1 tsp ground cumin
    2 cups shredded deli rotisserie or left over chicken, skin removed
    8 (8in) flour tortillas, warmed
    2 c shredded lettuce
    2 tomatoes, diced
    1/4 c thinly sliced halved red onion
    1/4 c cilantro sprigs
    1/2 c shredded Monterey Jack//Colby cheese blend

Directions:

Combine beans, salsa, and cumin in med microwave-safe bowl, microwave 2 to 3 minutes or until hot. Microwave chicken on microwave safe plate 1 to 2 mins or until hot.

Spoon bean mixture over tortillas; top with chicken and all remaining ingredients. Fold up bottom; roll sides.

Gail's Notes: I didn't combine the black beans with all of the salsa (since my hubby doesn't care much for black beans).  I also added some thinly sliced cucumber, chopped roasted sweet peppers, avocado (I was going to slice it but it was my avocado was too soft, so I just mashed it into a paste instead). I didn't have any fresh cilantro springs but it was still good (but definitely would have kicked it up a notch if I had had some on hand). I will definitely make this again! Yumm!
