Prep Time 10min.
Total Time 25min.
Servings 2 servings, 2-1/2 cups each

Chicken and broccoli are served on a bed of whole-wheat pasta in this weeknight-easy dish for two. Sprinkle with Parmesan and prepare for compliments.

1/4 lb. whole wheat spaghetti, uncooked
1/4 cup KRAFT Lite Zesty Italian Dressing
2 cloves garlic, minced
1/2 lb. boneless skinless chicken breasts, cut into strips
2 cups broccoli florets
1/2 cup chopped tomatoes
1/2 cup Shredded Mozzarella Cheese, divided
4 tsp. grated Parmesan Cheese

Cook spaghetti as directed on package, omitting salt.

Meanwhile, heat dressing and garlic in large nonstick skillet on medium heat. Add chicken and broccoli; cook and stir 5 to 7 min. or until chicken is done. Stir in tomatoes and 1/4 cup mozzarella; cook 1 to 2 min. or until heated through, stirring occasionally.

Drain spaghetti; place on serving plate. Top with chicken mixture, remaining mozzarella and Parmesan.

Gail's Notes:  If you have a NuWave oven, you might want to consider using it to melt the cheese over the pasta towards the end. How I did it was by tossing the cooked pasta with the cooked chicken-broccoli mixture, then I placed it in a 9" round pan and baked it in the NuWave oven (using the 2" rack) at full power for about 4 or 5 minutes. It melted the cheese perfectly and helped the pasta absorb the flavor from the cooked chicken and broccoli without drying out too much.

This was really tasty! Paul and I both liked it so I will definitely make this again.
