Parmesan, Chicken & Broccoli Pasta for Two (TNT)

Chicken
and broccoli are served on a bed of whole-wheat pasta in this weeknight-easy
dish for two. Sprinkle with Parmesan and prepare for compliments.

lb. whole wheat spaghetti, uncooked
1/4
cup KRAFT Lite Zesty Italian Dressing

cloves garlic, minced
1/2
lb. boneless skinless chicken breasts, cut into strips
2
cups broccoli florets
1/2
cup chopped tomatoes
1/2
cup Shredded Mozzarella Cheese, divided

tsp. grated Parmesan Cheese
Cook
spaghetti as directed on package, omitting salt.
Meanwhile,
heat dressing and garlic in large nonstick skillet on medium heat. Add chicken
and broccoli; cook and stir 5 to 7 min. or until chicken is done. Stir in
tomatoes and 1/4 cup mozzarella; cook 1 to 2 min. or until heated through,
stirring occasionally.
Drain
spaghetti; place on serving plate. Top with chicken mixture, remaining
mozzarella and Parmesan.

Notes: If you have a NuWave oven, you might want to consider using it to melt the
cheese over the pasta towards the end. How I did it was by tossing the cooked pasta
with the cooked chicken-broccoli mixture, then I placed it in a 9" round pan and baked
it in the NuWave oven (using the 2" rack) at full power for about 4 or 5
minutes. It melted the cheese perfectly and helped the pasta absorb the flavor
from the cooked chicken and broccoli without drying out too much.
This was really tasty! Paul and I both liked it so I will definitely
make this again.
