Gail's Version of Olive Garden's Chicken Marsala (TNT)

Gail's Version of Olive Garden's  Chicken Marsala Recipe (TNT)

2 thick chicken breasts, boneless & skinless
1/2 cup flour
Salt to taste
Pepper to taste
Dried oregano to taste
2 Tbsp Extra Virgin Olive Oil
2 Tbsp butter
1 cups fresh baby Portabella mushrooms, sliced
1/2 cup Marsala wine (I use Taylor's brand)

Slice thick chicken breasts to equal four 1/4" thick chicken breasts. 

Combine flour, salt, pepper and oregano in a mixing bowl.

Dredge chicken pieces in the flour, shaking off any excess.

Heat oil and butter in a skillet over medium heat.

Cook chicken breasts on medium heat for about 2 minutes on the first side, until lightly browned. Turn breasts over to cook other side, then add mushrooms to skillet.

Cook breasts about 2 more minutes, until both sides are lightly browned. Continue to stir mushrooms (be careful to avoid stirring chicken as much as possible).

Add the Marsala wine around the chicken pieces, then cover and simmer for about 15 minutes. 

Transfer to serving plate.  Enjoy!

Gail's Notes:  This is great and perfect for a romantic meal, especially if served along side cheesy-garlic bread and a fresh salad with homemade Italian Dressing (such as my version of  Zia's Sweet Italian Dressing).
