Spinach and Bacon Quiche
Spinach and Bacon Quiche (TNT-Gail's Version)

Total Time: 1 hr;  Prep: 15 min;  Cook: 45 min;  Yield: 8 servings;  Level: Easy

6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1/4 cup cubed or sliced, precooked Cremini mushrooms*
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

Preheat the oven to 375 degrees F.

Combine the eggs, cream, salt, and pepper in a food processor or blender. 
Layer the spinach, bacon, mushrooms, and cheese in the bottom of the pie crust, then pour the egg mixture on top. 
Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

Gail's Notes: I made one change to Paula's recipe and that was to add *precooked, sliced Cremini mushrooms! Talk about a good idea! It definitely kicked this up to a "gourmet" level (as if it wasn't there already!).  I highly recommend including these mushrooms (if you make this if you love mushrooms).

This is THE BEST quiche I have ever tasted! Granted, it's not "healthy" by any stretch, but I highly recommend you try this recipe if you love quiche!
