Sweet Cinnamon Sugar Roasted Pecans (TNT)

Cinnamon Sugar Roasted Pecans
1 lb pecans
1 egg white
1 Tb water (see note below)
1/2 tsp vanilla
3/4 cup sugar (see note below)
3/4 tsp cinnamon
3/4 tsp salt

  1. Combine sugar, cinnamon and salt in bowl and set aside.
  2. In medium to large bowl whisk together egg white, water and vanilla until frothy.
  3. Pour pecans into egg mixture and fold in until completely coated.
  4. Add sugar mixture and stir until completely coated.
  5. Line cookie sheet with foil and coat with non-stick cooking spray.
  6. Pour pecans onto baking sheet and spread evenly.
  7. Bake @ 215° for 1 hour, stirring every 15 minutes.
  8. Cool and store in an air tight container (that is, if there is any left).

Gail's Notes:  These roasted pecans are absolutely awesome!  As usual, I did make a few changes from the original recipe: I added a bit of Balsamic Syrup in with water to equal 2 TBS.  And I combined 1/2 cup sugar and 1/4 cup brown sugar instead of just using plain sugar.  I don't think the Balsamic Syrup really contributed much to the flavor (it was just an experiment anyway, so no big deal), but I do think combining a bit of brown sugar with the plain sugar was a good idea.  

I know one thing for sure:  I will definitely be making these again!  Yummmmmmm!!!!!
