Shrimp Salad (TNT)
Shrimp Salad (Gail's All-time Favorite!)
Ingredients:
1 pound large peeled and deveined cooked shrimp (I always remove as much liquid from the shrimp as possible with paper towels)
1 cup finely chopped celery (remember to remove the "strings" on top of stalk before chopping)
1 large carrot, shredded
1/2 cup chopped sweet onion (or you can use sliced green onions instead)
3 hard-cooked eggs, chopped
1/4 cup thick sliced, coarsely chopped cooked bacon (this is optional--I like bacon in this but it's not necessary--be sure to remove as much of the fat around the bacon pieces first before you break them up/chop them)
1/4 cup sour cream
1/4 cup mayonnaise (you can use 1/2 cup if you don't want to use sour cream)
Dash of Penzeys Parisien Bonnes Herbes, slightly crumbled (this is optional; I really like the flavor it gives to this salad and it's salt-free!)
salt and pepper to taste
Directions:
In a large bowl, gently toss the shrimp, bacon, celery, carrot, onion, eggs, mayonnaise, and herbs (if so desired). Season with salt and pepper. Chill until ready to serve. Servings: 4
Suggestions? I might add some thinly sliced radishes next time just to see how the crunch works with the rest of the salad. And perhaps some cucumber or zucchini slices, as well.
