Avocado Green Goddess Dressing
"This creamy variation on Green Goddess dressing replaces pungent
parsley with buttery avocado, but includes the usual spices and
anchovies."
1 large avocado (or 2 small), peeled and pitted
2/3 cup mayonnaise
1/3 cup sour cream
1/3 cup sour cream
5 anchovy filets, rinsed and chopped
2 tablespoons chopped green onion
1 tablespoon fresh lemon juice
1 clove garlic, chopped
Salt and pepper to taste
In a blender (or food processor), combine the avocado, mayonnaise,
anchovies, green onion, lemon juice, garlic, and salt and pepper. Process until
smooth, then chill for 24 hours before serving.
Yields: 6 servings
Gail’s Notes: The original recipe called for 1 cup mayo (no sour cream), but when I switched to making this with a combo of 2/3 cup mayo and 1/3 cup sour cream...well, let's just say it was an excellent change! This salad dressing is SO yummy! It's one of my all-time favorites salad dressings!
