Avocado Green Goddess Dressing
 
Yields: 6 servings 
 
"This creamy variation on Green Goddess dressing replaces pungent parsley with buttery avocado, but includes the usual spices and anchovies."
 
1 large avocado (or 2 small), peeled and pitted
1 cup mayonnaise
5 anchovy filets, rinsed and chopped
2 tablespoons chopped green onion
1 tablespoon fresh lemon juice
1 clove garlic, chopped
salt and pepper to taste
 
In a blender (or food processor), combine the avocado, mayonnaise, anchovies, green onion, lemon juice, garlic, and salt and pepper. Process until smooth, then chill for 24 hours before serving.

Gail's Notes: Instead of 1 cup mayo, I used 2/3 cup mayo and 1/3 cup sour cream. This dressing is so good—everyone in my family loved it!
