Apricot Chicken (TNT)

Apricot Chicken

4 chicken breast
flour
salt and pepper
1 onion
1 pkg french onion soup mix
1 can apricot nectar
2 tbs Russian salad dressing  (or Ranch Dressing, as that will taste good too!)

Coat chicken in flour, salt and pepper to taste and place in a casserole.
Chop onion and cover the chicken with it. Pour the packet of french onion
soup mix over that. Mix the apricot nectar with the Russian dressing and
pour over the chicken. Bake at 350F for 1 1/2 hours. 

Russian Salad Dressing

Yield: 8 servings

Ingredients

  • ½ cup mayonnaise

  • cup ketchup

  • 1 tablespoon red wine vinegar

  • 1 tablespoon finely chopped onion

  • salt and pepper to taste

Directions

  1. In a small bowl, whisk together the mayonnaise, ketchup, vinegar, onion, salt and pepper until thoroughly combined. Refrigerate until ready to use.

Gail's Notes: The chicken comes out so tender you can cut it with a fork.
