Mexican Shrimp Cocktail Recipe

Mexican Shrimp Cocktail Recipe 2 lbs of jumbo shrimp 2 thinly sliced celery stalks 1 chopped jalapeño (seeded) 1 chopped cucumber 2 chopped avocados a handful of chopped cilantro 1/2 a finely chopped onion. Start by boiling 2 lbs of jumbo shrimp until they curl into a loose "C" shape, then drain and cool them in ice water. Cut the shrimp into bite-sized chunks and combine in a large bowl with 2 thinly sliced celery stalks, 1 chopped jalapeño (seeded), 1 chopped cucumber, 2 chopped avocados, a handful of chopped cilantro, and 1/2 a finely chopped onion. For the sauce, mix the juice and zest of 2 limes and 1 orange, 11.5 oz tomato juice, 1/2 cup tomato sauce, 2 grated garlic cloves, hot sauce, salt, and pepper to taste. Pour the sauce over the shrimp and veggies, stirring to combine. Chill in the refrigerator for at least 1 hour, then serve cold. Enjoy this refreshing and flavorful dish!

Deli Style Broccoli Cheddar Salad Deli Style Broccoli Cheddar Salad is filled with fresh broccoli and other mix-in's then tossed in a creamy dressing. Servings: 8 Author: Shawn Ingredients 1 cup dried cranberries ( craisins) 4 cups broccoli florets , chopped bite size pieces 1 cup cheddar cheese , shredded 1/2 large purple onion , chopped 1/3 cup sunflower seeds , roasted For the Dressing: 1 cup mayo 1/4 cup apple cider vinegar , you can also use white wine vinegar or rice vinegar 1/4 cup sugar Instructions: Combine the 1 cup of dried cranberries with 2 cups of hot water (I just use the hot water from my sink).
