Baked Spinach Mushroom Quesadillas INGREDIENTS: 4 tortillas (8 inch) 1 cup shredded mozzarella 1 cup shredded cheddar 3 cups roughly chopped spinach 8 ounces sliced mushrooms Olive oil (optional, enough to lightly coat the tortillas) INSTRUCTIONS: Preheat Oven: Preheat your oven to 375°F (190°C). Sauté Mushrooms: In a large skillet, sauté the mushrooms until they are golden brown and tender. Assemble Quesadillas: Spread each tortilla with a layer of mozzarella and cheddar cheese. Top with the sautéed mushrooms and spinach. Fold and Place on Baking Sheet: Fold the tortillas in half, creating a half-moon shape. Place them on a baking sheet.
